The 33-year-old Samoan joined Sharks from St Helen's Rugby League club at around the same time as England wing Jason Robinson, but failed to have the same on-field impact as his fellow League man.
But following Hulme's departure from the club this week, the gap left in the fitness section of the coaching staff has been filled by Perelini, who earnt the nickname of 'The Terminator' due to his hard-tackling style.
"Fitness and conditioning is a role I have always wanted to move into, once my playing days were over," said Perelini, who joins Steve Hampson in that area of the club's coaching, working under first team coach Jim Mallinder.
"I worked closely with Marty and Steve last season and I am delighted that Jim Mallinder has shown the confidence in me to offer me this opportunity."
